Sesame Chicken Salad
Not only is this salad delicious as-is, it’s also amazing in spring rolls or in a pita to make a wrapsandwich! You could also try serving it with some vermicelli or rice noodles if you want a morefilling meal.
Ingredients
Dressing:
- 1 Tablespoon tamari or soy sauce if not gluten free
- 1 Tablespoon toasted sesame oil
- 1 Tablespoon rice vinegar
- 1 Tablespoon olive oil or neutral oil of choice
- 1 ½ teaspoons maple syrup
Salad:
- 5 cups shredded cabbage I use a combination of green and purple
- 1 ½ cups cooked shredded chicken about 1 large chicken breast
- ¾ cup loosely packed fresh cilantro chopped
- ⅓ cup sliced green onions
- ½ cup sliced almonds
- ¼ cup matchstick carrots
- 1 avocado peeled, pit removed, and diced
- Sesame seeds for topping
Instructions
- Add all salad ingredients together in a large bowl, then pour over the salad dressing and toss to coat.
Notes
I would recommend cutting the carrots into matchsticks and not grating them. If you grate them, they’ll dye the rest of the salad, so it won’t be as visually appealing.
