Sesame Chicken Salad

Not only is this salad delicious as-is, it’s also amazing in spring rolls or in a pita to make a wrap
sandwich! You could also try serving it with some vermicelli or rice noodles if you want a more
filling meal.

  • 1 Tablespoon tamari or soy sauce if not gluten free
  • 1 Tablespoon toasted sesame oil
  • 1 Tablespoon rice vinegar
  • 1 Tablespoon olive oil or neutral oil of choice
  • 1 ½ teaspoons maple syrup


  • 5 cups shredded cabbage I use a combination of green and purple
  • 1 ½ cups cooked shredded chicken about 1 large chicken breast
  • ¾ cup loosely packed fresh cilantro chopped
  • cup sliced green onions
  • ½ cup sliced almonds
  • ¼ cup matchstick carrots
  • 1 avocado peeled, pit removed, and diced
  • Sesame seeds for topping


  • Add all salad ingredients together in a large bowl, then pour over the salad dressing and toss to coat.


I would recommend cutting the carrots into matchsticks and not grating them. If you grate them, they’ll dye the rest of the salad, so it won’t be as visually appealing.
Optional ingredients include madarin oranges, wonton strips, and crunchy noodles.
