Preheat oven to 350F. Line a large 9×13” baking pan with parchment paper.
In a large bowl, whisk the eggs and milk together until smooth, about 1-2 minutes. Season with salt and black pepper.
Use a spatula to slowly cook the eggs to a soft scramble, about 4-5 minutes.
Slice the slider rolls in half lengthwise. Place the bottom half in the prepared pan.
Layer the rolls with the deli ham, soft scrambled eggs, chives, and cheddar cheese. Add the top half.
In a small bowl, mix the maple syrup, dijon mustard, and poppyseeds. Brush the mixture on top of the rolls.
Bake for 8-10 minutes, until the cheese is melted.
