(Meal Prep) Cabbage Roll Chopped Salad

  • (optional) rice vermicelli noodles cooked and drained
  • ½ green cabbage
  • ½ red cabbage thinly sliced, or replace with the remaining half of green cabbage
  • 1 english cucumber thinly sliced
  • 1 red bell pepper thinly sliced
  • 3 carrots peeled and thinly sliced
  • 1 ripe avocado diced
  • cup pickled onions
  • 6 tbsp. creamy almond butter
  • 2 tbsp. lemon juice or lime, freshly squeezed
  • 1 tbsp. maple syrup
  • 5-6 tbsp. water
  • Salt & Black Pepper to taste


  • In a large bowl, toss the thinly sliced cabbages, cucumber, pepper, carrots, avocado, and pickled onions until well mixed.
  • In a smaller bowl, mix the almond butter, lemon juice, maple syrup, and water until smooth. Season with salt and black pepper to taste.
