Grilled Baby Bell Pepper Appetizer with Minty Feta Dipping Sauce

For the Bell Peppers

  • BUBBL’R lemon lime twist’r for serving
  • 1 lb. baby bell peppers
  • ¼ cup maple syrup
  • 2 tbsp. fresh herbs chopped, such as dill, basil and mint
  • 2 tbsp. olive oil
  • 1 tsp. fine sea salt

For the Minty Feta Dipping Sauce

  • 8 oz. block feta cheese
  • ½ cup plain greek yogurt
  • ¼ cup fresh dill
  • ¼ cup fresh mint leaves
  • juice of 1 lemon
  • salt & black pepper to taste


  • In a large bowl, toss together all the bell pepper ingredients. Cover and let marinate for at least 15 minutes.
  • Preheat grill to 450F.
  • Place the bell peppers on the grilling racks to cook 4-5 minutes on each side, until lightly charcoaled.
  • Slice the feta block in half. With the first feta half, slice it into tiny bite-size pieces. Toss the feta bites in the remaining marinade. Set aside.
  • With the second feta half, add it to a food processor or blender with the remaining dipping sauce ingredients. Blend until smooth. Adjust texture by adding a little water to thin out or season with salt and black pepper to taste. Transfer to a small sauce dish.
  • Place the grilled baby bell peppers on a serving platter, then top with the feta bites, and drizzle with any remaining marinade on top.
