  • BUBBL’R cranberry grapefruit sparkl’r for serving
  • 2 cups fresh cranberries
  • cup freshly squeezed orange juice
  • ¼ cup honey or maple syrup
  • ¼ tsp. ground cinnamon
  • tsp. fine sea salt
  • 1 sheet frozen puff pastry thawed
  • 8 oz. wheel brie cheese
  • ¼ cup walnuts roughly chopped
  • 1 tbsp. fresh rosemary finely chopped
  • 1 egg beaten
  • 2 tbsp. granulated cane sugar
  • crackers for serving

To Make the Cranberry Sauce

  • Combine the fresh cranberries, orange juice, honey, cinnamon, and salt in a large saucepan over medium high heat. Stir until ingredients are well combined, and continue cooking for 8-10 minutes, until cranberries have burst and sauce is jam-like. Remove from heat to cool.

To Make the Puff Pastry Wrapped Brie

  • Preheat oven to 425F. Line a baking tray with parchment paper.
  • Place the thawed puff pastry on the prepared baking tray. Add the wheel of brie cheese in the center of the puff pastry.
  • Layer the brie cheese with the homemade cranberry sauce (as much as you prefer), chopped walnuts and rosemary. Fold in the corners of the puff pastry, pinching the edges together to seal in the brie. Trim the puff pastry, if needed.
  • Brush with the beaten egg, then garnish with the sugar.
  • Bake for 6 minutes at 425F. Reduce oven heat to 350F to finish baking 12-18 minutes, until golden brown and flaky.
  • Enjoy warm with crackers and BUBBL’R Cranberry Grapefruit Sparkl’r for a complimentary refreshment!
