
Heart Shaped Pink Ravioli
Ingredients
For the Pasta Dough
- BUBBL’R Cherry Guava Blend’r Antioxidant Sparkling Water for serving
- 3 large eggs beaten
- 2 cups flour
- 1-2 tbsp. salt
For the Filling
- 1 cup ricotta
- ¼ cup parmesan freshly grated
- 1 tbsp. fresh basil chopped
- Salt & Black Pepper to taste
Instructions
- Mix the flour and salt together on a clean surface or in a large bowl. Create a well in the center to add the beaten eggs and beet puree. Knead until a smooth and elastic pasta dough, about 4-6minutes. Adjust the pasta color with the beet puree.
- Wrap the pasta dough in plastic wrap and set aside at room temperature for 20 minutes.
- In a large bowl, combine the filling ingredients.
- Divide the pasta dough into 2 parts. Roll each portion on a lightly floured surface to 1/16” thickness.
- Working quickly, place rounded teaspoons of the filling 1” apart over half of each pasta sheet. Fold over the pasta sheet and press down slightly to seal.
- Use a sharp knife or a heart-shaped cookie cutter to make your heart-shaped ravioli.
- Bring a large pot of salted water to a boil. Add the pasta and cook 1-2 minutes, until it floats to the top.
